Instructions

Step 1
Heat oil in a large, high-sided skillet over medium heat. Season the chicken with salt and pepper, then cook for 3–5 minutes until lightly browned. Remove from the pan and set aside.

Add the chorizo, onion, garlic, bell pepper, and jalapeños to the skillet. Cook for 3–5 minutes, stirring occasionally, until softened and fragrant. Stir in the rice, cumin, and oregano, cooking for another 2–3 minutes until the rice is well coated.

Step 3
Stir in the tomatoes, broth, chipotle peppers, and turmeric. Bring the mixture to a boil, then return the chicken to the pan. Reduce the heat to medium-low and simmer for 12–15 minutes.

Step 4
Nestle the mussels and shrimp into the rice. Continue cooking for 10–12 minutes, until most of the liquid has been absorbed, the rice is tender, the shrimp and chicken are cooked through, and the mussels have opened.

Step 5
Discard any mussels that remain closed. Garnish with fresh cilantro and serve with lime wedges on the side.

Recipe Tip

Before cooking, scrub the mussels and remove the beards. Discard any mussels with cracked shells or any that do not close when tapped.
