What Are Flapjacks?
In many homes across South Africa, the terms flapjacks, pancakes, and crumpets are often used interchangeably. While technically different in some parts of the world, here they usually refer to the same fluffy, pan-cooked batter rounds served with butter, syrup, cream, or fruit.
No matter the name, they’re all about comfort and simplicity.

Ingredients
(Serves about 10 flapjacks)
1 large egg
200 ml milk (plus a little extra if needed)
2 tablespoons melted butter or oil (plus extra for greasing the pan)
1 tablespoon granulated sugar
1½ teaspoons baking powder
1 cup cake wheat flour

Method
Prepare the wet mixture
In a bowl, beat the egg. Add the melted butter (or oil) and milk. Mix well.
Combine the dry ingredients
In a separate bowl, sift together the flour, baking powder, and sugar.
Make the batter
Gradually add the dry ingredients to the wet mixture, whisking until smooth and lump-free.
If the batter feels too thick, add a small splash of milk at a time. The consistency should be slightly thick but pourable — when lifted with a spoon, it should fall in a ribbon.
Cook the flapjacks
Heat a lightly greased pan over medium heat.
Pour about ¼ cup of batter into the pan for each flapjack.
Cook until small bubbles form on the surface. Flip and cook the other side until golden and cooked through. Adjust the heat if they brown too quickly — cooking too fast can leave the centres underdone.

Serve
Serve warm with butter, cream, golden syrup, maple syrup, honey, or fresh berries.

Helpful Tips
The batter thickens slightly if it stands. If it becomes too thick, stir in a little more milk.

Cook on medium heat for even browning and a fluffy interior.
You can double the recipe easily for a larger crowd.
For an egg-free option, replace the egg with a teaspoon of lemon juice or vinegar and consider using buttermilk instead of regular milk. The texture will be slightly different but still delicious.
These flapjacks are the kind of recipe you’ll return to again and again — simple, reliable, and always satisfying. Try them once, and they just might become your go-to comfort breakfast too.
